Several Kinds of Christmas Cookies

I had my final discussion section for one of my classes yesterday, and I was the last one who had to bring in snacks for everyone. I decided to bring in Christmas cookies because I wanted to make some for myself anyway, and I didn't want to have to go out and buy anything to bring for discussion. I ended up making five different types of cookies to bring. Some were also put aside to be sent to my former college roommate and to her parents. I made two kinds of butter cookies, two kinds with peppermint flavoring, and chocolate chip cookies.

There are pictures of the first four kinds (the colorful ones!) behind the cut. There aren't any of the chocolate chip ones because I haven't put those pictures on my computer. Those were my usual Nestle Tollhouse chocolate chip cookies, with a mix of mini and regular chocolate chips. There are 21 pictures (320x240 pixels) behind the cut. All of them link to larger (800x600 pixels) pictures, so just click on the images and they should open in a new window/tab. If you want any of the recipes, just let me know and I can type them up. I've added links to PDF files of the recipes that are on Google Docs. Click on the cookies' names above their pictures (in the colored bars) to access those. Let me know if you can't access them or if they look weird.

Chocolate Cake Goodness

Hey Everyone,

My friend and I baked a cake last week. It turned out really good, and I thought I should share the recipe with everyone. It was a great load of fun for us, and I did enjoy making it. I would def. make it again!!!

Click the link, for the recipe. You can note by the cake, we are not professional icing decorators xD M&Ms were used, store bought (sadly I cannot create my own M&Ms)

mmmm brains...I mean Cake!!! )

Looking for the perfect glaze! help me.

I just made the perfect pumpkin spice scones! but the icing/glaze was just wrong. i really dont like the taste of a lot of powdered sugar in a glaze, i think its disgusting. does anyone know of an awesome glaze that would go with these scones? i'd love to take them into work for people, but there simply incomplete without the sweet sweet glaze.

Pomegranate request

I'm stuck at home today with a pomegranate and decided I'd like to bake something. There was no pomegranate tag, and google searches aren't bringing me much.

Basically, I don't have a car so I'm just looking for a really simple yet delicious recipe that calls for a pomegranate. Possibly some sort of bread or cake? Thanks!

Preemptive Baking...?

First time poster here, although I've been lurking for quite a long time. Here is my dilemma:

Also, I'd like to thank this bakebakebake for inspiring Bike 'n' Bake, a group of cyclists that meets sporadically to bake delicious treats that are more often than not recipes from this community. Here's a picture from our first meeting, last February:

In the foreground are the cupcakes I made, using this delicious recipe. The cupcakes in focus are chocolate raspberry cupcakes, which I never got the recipe for.

Carrots

Hello bakers! While I was looking through some cookbooks I found a recipe for carrot cookies does anyone have a recipe for carrot muffins or zucchini muffins? Preferably anything with no milk or just regular milk (no buttermilk because I have to substitute lactose free milk) if possible.

Thank so much for the help.

AIDS cookies!

It was world AIDS day on 1st December so I made these to take into work; amazing chocolate chip cookies, with little information cards with AIDS/HIV information and information about where to get free condoms in our town. So yeah, these would be the awesomely named AIDS cookies!

'tis the season - cookie swap!

Hey bakers! I've been invited to a Christmas cookie swap sometime in the next 2(?) weeks, and I was wondering if you have some favorite Christmas cookie recipes to share? :) I have two types in mind (chocolate crinkles [minus the hazelnuts - I'm trying to be wary of possible nut allergies] and pinwheels), but I'd LOVE some more suggestions, things that always disappear quickly when you make them.

Thanks in advance! :)

Giant Cupcake Recipe: Help!!

Hey!!

I'm making cupcakes for my sister's 21st birthday party next Saturday and she has just decided that as well as wanting 2 tiers of cupcakes, she also wants 2 giant cupcakes on top! I've got the pan but the recipe/ingredients are in American quantities. I need to make one chocolate and one vanilla. I've searched online for conversions but I'm getting slightly different results each time. Does anyone have a recipe using UK (ounces or grams) and any tips on using the pan? Also, my oven is gas, has anyone with a gas oven used this pan before? I'm having a practice run this weekend.

Christmas cupcakes

Hi, this is my first entry.

I am not too keen on cupcakes and I'd choose any other dessert over that, but last night was my first attempt at cupcakes and Italian meringue buttercream and messing around with evil E numbers.

The questions:

1) Unfortunately Italian meringue buttercream was too buttery. It tasted...like fluffy butter. Is that how Italian buttercream is supposed to taste? I still have lots of this buttercream left over - would adding icing (or in American, confectioner's) sugar help with this without ruining the consistency? Might just adding a little more salt help?

2) Buttercream - just the combination of sugar and fat seems excessive. I love the cream cheese frosting ok, but the only cream I love that holds up well with piping and decorating is chocolate ganache. What is your favourite piping cream that you can never get enough of licking? Share the recipe?))

3) What's your most effective thing to moisten the cupcake? Mayonnaise? Apple sauce? Sour cream? When you add the above, do you have to add/reduce something else in the ingredients?

recipes requested: mimosa cupcakes

I'm planning on making some type of mimosa inspired cupcakes to christmas. Anyone have any tried and true delicious recipes that incorporate champagne and oj? I could do orange cake and champagne icing or do an orange icing/champagne cupcake. Or both!

Thanks for your suggestions!

monsters inc cupcakes

I was really thrilled when I got this order, because I'm a huge fan of Monsters Inc! The client requested for Monsters Inc theme, so I came up with fondant toppers of the main 3 characters. The message colours were blue and white, in light of the colours of the Monsters Inc logo :) I really wanted to do justice to Boo's cuteness, and tried my hardest. I'm super glad that the sweet client, along with the recipient, loved the cupcakes :)

More photos on my foodblog, and after the jump.
